A great Premier Cru from very old vines, averaging about 60 years. It grows south of the Grand Cru hill in Chablis on the left bank of the Serein river. Domaine Billaud-Simon owns 2.55 hectares in this excellent location, which is one of the best in Chablis. This wine spends fourteen months aging, partly in barrique, which gives it the finishing touch, but here too the wood influence always remains in the background. Brilliant and minerally cool, yet for all its clarity and elegance, this Chablis "Mont de Milieu" also has a creamy, soft touch, due to its high extract and the perfect ripeness of the grapes. A wine that tastes young, but can also be stored for several years.

The domaine has 20 hectares of vines in some of the best sites in the appellation. The majority of the domaine`s wines see no oak at all, with the aim being to produce Chablis of elegance, purity, balance and freshness. These are crisp, mineral-laden wines that are superb examples of modern style, un-oaked Chablis. They are delicious when young, yet age beautifully as well.
